This is why mission-critical things like, for instance, fileservers have 
this kind of partition layout too.

A single / filesystem is fine on a home or desktop box, but ZFS is most 
useful on Petabyte-scale setups and that's precisely where you're most 
likely to find multiple partitions for the OS.
