When I was botting ZFS on gentoo, with a pool named "tank" and "tank/gentoo/root" dataset as the mountpoint for "/" mine looked like this:
"Gentoo ZFS" {
        kernel kernel[-v]
        initrd initramfs-genkernel-x86_64[-v]
        params real_root=ZFS=tank/gentoo/root
        params += dozfs=force
that gave me a grub.cfg with final two lines that looked like:
linux  /kernel-X.XX.X-gentoo root=ZFS=tank/gentoo/root dozfs=force ro
initrd /initramfs-genkernel-x86_64-X.XX.X
I had LUKS encryption working also, but I think that only added like "crypt_root = /dev/whatever" params line also, which I removed for clarity. Is that helpful?
