Assume a history like this:

foo at A
foo at B
foo at C -- virus
foo at D
foo at E -- current

This would be a bit of a hack, and I haven't tested if it works, but...

zfs clone foo at B bar
zfs send -i @B foo at E | zfs recv bar

If desired, stop the VM and give it another round of snapshot & send | recv.

Then, do the rollback.

You're still copying data, but at least you're only copying the delta, 
not the whole thing.
